Anyone who knows me knows that I am NOT a baker - it's far too precise and follow-the-recipe for me. I like to experiment with cooking - I like to change recipes and add or subtract and make something my own. And more importantly, more to my liking.
But I recently came across a recipe for a cobbler (and who doesn't love a cobbler?) that seemed simple and what's more, adjustable.
The original recipe calls for a streusel over the top of the cobbler instead of a pie crust. I wasn't feeling the streusel so I decided to cut strips from a pie crust and do a lattice top (not my best work but hey - it's my first fruit pie).
It couldn't be simpler - 2 cups peaches, 1/2 cup raspberries, 1/2 cup sugar, 1/4 cup flour. Mix together and toss to coat peaches and raspberries. I added cinnamon and nutmeg to the mixture after I poured it into the pie shell. I THINK next time I may grate some lemon zest in, as well. We'll see.
Then I TRIED to lattice the top with pie crust but I wasn't too good at it - it looked VERY broken and not pretty but again, my first pie OK?
In any case, the end result was WONDERFUL. Tart and sweet - needed no toppings at all!
